Gluten and Casein Free Pasta Salad

My whole family is on a gluten free diet now. That includes me, which is quite incredible because I said I wasn’t going to do it.  I’ll share my reason for changing my mind in a future post.

Anyway, here’s a great recipe for pasta salad that I made using some gluten free pasta. Gluten free pasta can be made from rice, corn or potato flour and is quite good. The pasta we use is made from a combination of gluten free flours. I buy it at the regular grocery store. If you can’t find gluten free pasta at your local grocery store, try looking for it at a health food store or a speciality store online.


Ingredients:

  • 1  500 g bag of penne gluten free pasta
  • 2 cloves garlic minced
  • 1 1/2 cups marinaded artichoke hearts
  • 1 cup jarred roasted red peppers diced
  • 1 cup sun dried tomatoes sliced
  • 1/2 cup black olives sliced
  • 2 tablespoons balsamic vinegar
  • 8 tablespoons extra virgin olive oil
  • 1/2 teaspoon black pepper
  • 4 tablespoons fresh flat-leaf parsley finely chopped

Cook pasta according to directions on the package, drain and rinse with cold water. Put sun dried tomatoes, roasted red peppers, artichoke hearts, and olives in a large mixing bowl. Mix garlic, olive oil, vinegar, and black pepper well in a separate smaller bowl. Add pasta to large bowl and pour the olive oil mixture from the smaller bowl over it. Add parsley and toss all the ingredients together. This is delicious. My family loves it. I hope yours will too.
