Chicken Laksa
Written by Lovelyn on February 13, 2009 – 4:32 pm -I recently started eating meat again. My main reason is for convenience. I just got so tired of making two meals all the time. I made this Malaysian dish for dinner yesterday and it was quite delicious.
Ingredients
- 2 boneless skinless chicken breast cubed
- 2 tablespoons cooking oil (I use grape seed oil)
- 2 green onions sliced (separate the green section from white section)
- 2 cloves garlic minced
- 1 cup mung bean sprouts
- 1 red pepper thinly sliced
- 1 teaspoon turmeric
- 2 teaspoons red curry paste ( if you can find laksa paste use that and follow the directions for the amount. I always used red curry paste in the States when I made this, but I can get laksa paste in the grocery store here.)
- 2 1/2 cups chicken stock
- 1 can coconut milk
- 2 tablespoons fish sauce
- 1 teaspoon brown sugar
- 3 1/2 oz (100 g) rice noodles
- 1 tablespoon lemon juice
- 2 tablespoons fresh cilantro coarsely chopped
Prepare your rice noodles according to the instructions on the package. Heat oil in a pot. Add white part of the green onions and saute for a minute. Add garlic, turmeric, and red curry paste (laksa paste) and saute for another minute. Now add stock, coconut milk, sugar and fish sauce. Bring it to a boil and then turn down the heat and let simmer for 5 minutes. Add chicken, bean sprouts and sliced red pepper and let simmer for a couple more minutes. Add rice noodles and let simmer for 2 minutes. Add lemon juice, green parts of the green onion, and cilantro and remove from heat.

I’m Malaysian too.
It looks different with local laksa. If you guys come Malaysia, go Kuching to try Kuching Laksa and we have another taste of Laksa from Penang~
