Swede Soup

So I tried this recipe the other day. The hardest part about it is cutting the swede. It was so hard a few times I almost chopped my fingers off. I need to get better knives. Anyway, here’s the recipe.

Ingredients


  • 1 swede (rutabaga) peeled and chopped into small cubes
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 stick celery finely chopped
  • 2 tablespoons olive oil
  • 5 1/2 cups vegetable stock
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1/2 black pepper
  • 1/2 teaspoon oregano
  • 6 cardamon pods
  • salt to taste

Put olive oil in a large pot and saute onion, celery, and garlic over medium heat for a few minutes. Add swede and saute for a few more minutes. Add spices and soup stock. Cover and bring to a boil. Reduce heat and let simmer until the swede is soft.
