Swede Soup
Written by Lovelyn on November 26, 2008 – 3:51 pm -So I tried this recipe the other day. The hardest part about it is cutting the swede. It was so hard a few times I almost chopped my fingers off. I need to get better knives. Anyway, here’s the recipe.
Ingredients
- 1 swede (rutabaga) peeled and chopped into small cubes
- 1 large onion chopped
- 3 cloves garlic minced
- 1 stick celery finely chopped
- 2 tablespoons olive oil
- 5 1/2 cups vegetable stock
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1/2 black pepper
- 1/2 teaspoon oregano
- 6 cardamon pods
- salt to taste
Put olive oil in a large pot and saute onion, celery, and garlic over medium heat for a few minutes. Add swede and saute for a few more minutes. Add spices and soup stock. Cover and bring to a boil. Reduce heat and let simmer until the swede is soft.

I love the smell and taste of Oregano when added in some recipes..,~
