Moroccan Sweet Potato Stew

I made this the other day and it was very good. I found the recipe online and then added some more spices to suit my taste.  I served it with rice, but you can also serve it with couscous or bulgar wheat.

Ingredients


  • 2 teaspoons olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 medium sweet potatoes peeled and cut into 1/2 cubes
  • 1 14 ounce can chopped tomatoes
  • 1 1/2 cup water (using stock instead of water might make it even taster. I didn’t have any stock on hand so I just used water)
  • 1 can chick peas drained and rinsed
  • 1/2 cup raisins
  • 1 1/2 teaspoon ground coriander
  • 1 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 cup of fresh chopped cilantro
  • salt to taste

Saute the onion in the olive oil until it’s translucent. Add garlic, coriander, cumin, cinnamon, cayenne pepper, and ginger and stir for thirty seconds. Add sweet potatoes and mix together to coat potatoes with spices. Add tomatoes and water. Bring to a boil. Reduce to medium heat and let simmer uncovered for twenty minutes or until potatoes soften. Stir in raisins, chick peas and salt to taste. Cover and cook for five minutes. Add cilantro and remove from heat.
