Spicy Cabbage

It’s been along time since I’m posted a recipe. I made this cabbage dish today and it’s quite good.

Ingredients

  • 4 tablespoons extra virgin coconut oil (You can use butter.  I’ve tried using olive oil before and it didn’t taste as good.)
  • 1/2 teaspoon cumin seeds (use ground cumin if you don’t have seeds)
  • 1/4 teaspoon chili powder
  • 1 small onion thinly sliced
  • 2 1/2 cups cabbage shredded
  • 2 medium carrots grated
  • 2 tablespoons lemon juice
  • salt to taste

Melt coconut oil in a large pot over medium heat. When the oil has melted add cumin and chili powder and cook for 30 seconds. Add sliced onion and cook for 2 minutes stirring constantly. Add cabbage and carrots and stir-fry for 5 minutes or until cabbage is soft. Add salt to taste and lemon juice and remove from heat.

This is a tastey side dish. I’m not a big cabbage fan, unless it’s in kimchi, so if I like it, you know it’s good.

    Oh I love kimchi, I’ll have to try this. I wish I’d seen this recipe before I went to the market this morning!

    This recipe tastes nothing like kimchi, Tracy. It is quite delicious though. I served it with grilled white fish and rice pilaf the other day.
