Thai Bean Sprout Salad

I made this for lunch today and it was delicious. I wanted to make a raw Pad Thai so I looked at a bunch of recipes and this is what I came up with.

Ingredients

  • 1 zucchini
  • 1 cucumber
  • 1 cup bean sprouts
  • 1 red pepper julienned
  • 3 scallions thinly sliced
  • 1 glove garlic minced
  • 1 lemon
  • 1/4 cup olive oil
  • 2 inch piece lemon grass very thinly sliced
  • 2 tablespoons tamari sauce
  • 1/3 cup fresh basil chopped

I wanted to make noodles out of my zucchini and cucumber by had no spiraler so I used a peeler to make them into long thin noodle like strips. Then I combined the zucchini, cucumber, pepper, bean sprouts, scallions, and basil in a large bowl. For the sauce I combined the juice of 1 lemon with the olive oil, garlic, lemon grass, and tamari sauce. I stirred it all up, poured it over my veggies and chowed down.
