Eggplant and Garlic Sauce

I made this for lunch today. I like eggplant a lot and this is a good, quick way to cook it.
Ingredients
- 1 medium eggplant chopped
- 1 red pepper chopped
- 6 clove garlic minced
- 2 tablespoons tamari sauce
- 1/2 tablespoon rice vinegar
- 1 tablespoon rice wine
- 1 tablespoon honey
Heat oil in a wok or whatever you happen to be cooking in. Add eggplant and garlic. You have to make sure that you stir constantly. Cook for two minutes. Add tamari sauce, rice vinegar, rice wine, honey. Stir for one minute. Add red pepper and stir for two more minutes, and it’s done. Serve it with rice.
Fast and easy. That’s the way I like my food. We don’t use soy sauce anymore because we discovered that it has wheat in it. You can find wheat in the most unexpected places. I used honey in this recipe because we’re trying to cut down on our sugar intake. Actually we’d run out of sugar.
