Chana Masala

I love Indian food. I’m a huge fan of curries in all their varieties and love spicy food in general. This is a simple recipe that I make a lot.

Ingredients

  • 2 tablespoons extra virgin coconut oil (use any vegetable oil, I also use coconut oil for my Indian cooking)
  • 1 can chickpeas drained and rinsed
  • 1 small onion finely chopped
  • 1 teaspoon cumin seeds
  • 2 tablespoons tomato paste
  • 1 teaspoon grated ginger
  • 2 teaspoons coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 1/2 cup water
  • 1/4 teaspoon garam masala
  • 1 teaspoon fresh cilantro chopped
  • salt to taste

Heat oil in a saucepan. Once oil is hot add onion and cumin seeds. Cook until onion is translucent. Add tomato paste, ginger, turmeric, chili powder, and coriander. Mix this into the oil well and let cook on medium heat for a couple of minutes, just until the oil starts to separate from the tomato paste. Add chickpeas and water. Cover and let simmer for 10 minutes. When it’s through simmering add garam masala and salt to taste. Let cook for another couple of minutes. Stir in fresh cilantro and serve with rice or naan.
