Spanish Tuna Stew

This is another delicious recipe from the folks at Mediterasian.com. I love it even though my stepson thinks it’s the pits. I don’t understand why. All the ingredients in it are things he likes.

Ingredients


  • extra virgin olive oil
  • 1 medium sized onion finely chopped
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 3 cloves garlic finely chopped
  • 1 small potato cut into small cubes
  • 1 14 oz can chopped tomatoes
  • 1 1/2 cups fish, chicken or vegetable stock
  • 1/2 cup white wine
  • 1 tablespoon tomato paste
  • 2 teaspoons paprika
  • 1/2 teaspoon black pepper
  • 6 oz can tuna drained and broken into chunks
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • salt to taste

Saute the onions and peppers in a couple splashes of olive oil for 6 minutes over medium heat. Add the potatoes, tomatoes and garlic and cook for a few minutes. Now add the wine, stock, tomato paste, black pepper and paprika. Once it comes to a boil turn the heat down. My stove is crazy so I have to turn it down to low, but people with normal stoves should probably turn it down to medium low and let it simmer for 25 minutes or until the potatoes are soft. Gently stir in the tuna and parsley and another splash of olive oil and serve over rice. Yum.
