Raw Lasagna
This is a recipe that I made the other day. It tasted nothing like lasagna but it was still quite delicious. It’s not very hard to make.
Ingredients
Eggplant layer
- 1 medium eggplant thinly sliced lengthwise (these will be your “noodles”)
- 2 cups water
- 1/4 cup tamari sauce
Sauce
- 6 medium tomatoes chopped
- 1/2 cup fresh basil finely chopped
- 5 dry packed sun-dried tomatoes soaked in warm water for 30 minutes and finely chopped
- 1 glove garlic finely chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 zucchini julienned
Cheese
- 1/3 cup tahini
- 1/3 cup extra virgin olive oil
- 2 tablespoons tamari sauce
Mix water and tamari sauce together and marinate eggplants slices in the mixture for 2 to 12 hours. I only marinated it for 2 hours and it was fine but I’m sure it’d taste better if you marinated it for 12 hours.
Mix the tomatoes, sun-dried tomatoes, basil, oregano, garlic and black pepper together. You’re supposed to put them in the blender to make them a sauce. I don’t have a blender yet so I just mixed the stuff together and it was great. If you’re going to blend it you don’t have to worry about chopping things up finely.
Mix the tahini, olive oil and tamari sauce together well.
Now you will layer these things on a plate much like lasagna. Put a noodle layer down. Top it with some julienned zucchini. Put a layer of sauce or your chopped tomatoes if you didn’t blend it on that and then drizzle on a layer of “cheese”. Repeat that process several times until you’re lasagna is the size you want it. Then chow down.
