Avocado and Tomato Salad
Written by Lovelyn on May 28, 2008 – 9:59 am -Things are finally back to normal and I’m finally back to taking unappealing food photos.
The other day I bought some avocados on a whim. I didn’t know what I’d do with them. After much thought and consideration I decided to make this tasty salad.
Ingredients
- 3 avocados chopped
- 3 medium tomatoes chopped
- 1 scallion thinly sliced
- 1 small clove garlic minced
- 1/4 teaspoon grounded cumin
- 1/4 teaspoon grounded corriander
- 1 teaspoon extra virgin olive oil
- the juice of 1/2 lime
- salt and pepper to taste
I just mixed all these ingredients together and chowed down. It made a delicious Sunday lunch. Much better than the sandwich my stepson was eating.
