Fried Rice
Written by Lovelyn on March 12, 2008 – 7:41 pm -I decided to post a basic fried rice recipe that I make, but I stupidly forgot to take a picture of it before we ate it for lunch a few minutes ago. So I found this picture online by aNantaB. It’s probably better than any picture I’d take.
I love fried rice and think it’s a good quick lunch.
Ingredients
- 1 small onion finely chopped
- 2 eggs scrambled
- 1 medium carrot finely chopped
- 1 celery rib finely chopped
- 1/4 cup frozen peas
- black pepper to taste
- 1/8 teaspoon garlic powder
- 1 to 2 tablespoons of soy sauce
- 4 cups of cold cooked rice
- oil for frying
Heat up a large no stick frying pan or wok add about a half a tablespoon of oil or whatever amount of oil you would normally use to scramble to eggs. Add eggs and cook until done. Remove eggs from the pan and wipe the pan out. Replace pan on heat and add 1 to 2 tablespoons of oil. Add onion and cook until translucent. Next add carrots and celery. I’ll add any other vegetable I happen to have hanging out in the fridge too. Cabbage, mushrooms and zucchini are just a few examples. Cook until the vegetables are tender then add frozen peas and garlic powder. Stir. Once the peas have thawed add the rice. Use a wooden spoon to break up any lumps the rice might be forming. Keep the mixture moving around in the pan. Add your desired amount of soy sauce and black pepper. To determine these amounts I use the method of constant tasting. Put the egg back in the pan and stir some more. Once everything is hot and well combined you’re done.
I like to toast a sheet of nori, crumble it up and stir it into my rice. If you happen to have nori around your house try doing that, it’s good. If you don’t happen to have nori around your house, maybe you should get some. It tasty and good for you.
