Raw Kale Greens Recipe

I don’t eat raw food all the time but I think it’s a good idea to incorporate raw foods into my diet. I try out new recipes all the time. This is one that I’ve been making recently that’s really good.


This is a raw greens recipe I got from another blog. I’ve modified it to my taste. I use kale greens instead of collards. You can check out the originally recipe here. It has a little too much salt for my liking. This is my version:

Ingredients

  • one bunch of kale
  • 1/8 cup extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 clove of garlic finely chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup green onion thinly sliced (white parts only)
  • 1/4 cup chopped sun-dried tomatoes

Wash the kale thoroughly and chop into small pieces. Put into large bowl and add the olive oil and sea salt. Mix well. I use my hands to toss the greens and squeeze them a little bit as I do to make sure the salt really gets into them to help wilt them a bit.

In a separate bowl mix the red pepper, black pepper, vinegar, garlic, green onions and sun-dried tomatoes. Then dump you kale into the bowl with the marinade. Mix thoroughly making sure all of the kale is coating. Refrigerate over night.

I took this to Christmas dinner at my parents house and everybody loved. At least they said they loved it. Who knows what said behind my back.

    I tried this recipe last night and I absolutely love it! My husband is a picky eater and even he had to admit it was good. I really liked the kale. We love spicy food so I went a little heavy on the crushed red pepper. Thanks so much.
